Tonka bean and dark chocolate mini muffins

Ingredients (30-odd mini muffins):

440g of sieved flour
100g of brown sugar
60g of sugar
1 pinch of salt
1/2 Tonka bean
1 sachet of baking powder

4dl of milk (+ ½ cc of lemon juice, leave for 10min)
2 eggs
80g of melted butter

100g ob dark chocolate 72% Villars,
crushed into small pieces

Preparation: 15min

Baking time: 30min





Mix the dry ingredients in a bowl.

In another bowl, mix the eggs with the milk, add the butter then pour the liquid into a bowl and mix together. Add the small pieces of dark chocolate. Mix well.

Pour into a pre-greased muffin tray (up to around  ¾ of its height) and bake for 25-30min in the oven at 190°C (fan assisted). Test with a knife or another sharp object. Once ready, remove from the oven and leave them to cool. Even better when eaten slightly warm!
