Chocolate sorbet

 

Ingredients :

• 200g dark chocolate
• 250g sugar


 

 

Prepation method:

Melt the chocolate cut into big pieces in a bain-marie in gently simmering water. Leave to cool.
Put 50cl of water in a saucepan and add the sugar. Heat over a medium flame stirring all the time, until the sugar has completely dissolved. Add the melted chocolate and leave to cool completely in the freezer.
Pour the mixture into a sorbet maker or metal recipient, and place in the refrigerator.


When the sorbet starts to set, whisk with an electric beater or using a spoon until creamy. Repeat the operation 3 or 4 times until the sorbet is dense and smooth.
