• 70g of white chocolate • 150g of dark chocolate • 50g of dried apricots • 80g of dry biscuits • 50g of grilled almonds • 50g of glace cherries • 40g of butter • 60g of white chocolate

Preparation method:
Mix together the crumbled biscuits, almonds, finely chopped dry apricots, roughly chopped cherries, and white chocolate chips (70g) in a large bowl. Melt the butter and 150g of dark chocolate cut into large bits in a bain-marie in gently simmering water. Remove the pan from the heat and set aside for 5 minutes. Pour the melted chocolate over the mixed ingredients and mix thoroughly. Place on a piece of cling film and make a 25cm-long roll. Wrap the roll in the cling film and leave for 12 hours in the refrigerator. Cut the pastry roll into 1cm-thick disks. Melt the white chocolate (60g) in a bain-marie in gently simmering water and use to decorate.
