Chocolate Mousse Lisboa
•4 egg whites
•160g Dark Chocolate 63%
•1 to 2 teaspoons of soluble coffee diluted in a small cup of water
•50g of butter
•1 orange peel (1 teaspoonful)
1/Separate the egg whites from the yolks.
2/Mix the egg yolks and the sugar until the mixture whitens
3/Add the coffee and the grated orange peel
4/Whip the egg whites up
5/Melt the chocolate in a waterbath or 2 minutes in the microwave oven at medium power. Add butter.
6/Add the chocolate and butter mixture to the egg yolk and sugar mixture
7/Carefully add the egg whites
8/Pour into small recipients and chill for 4 hours.
